A CLOSER LOOK

How to recognize it

Long, broad green leaves with smooth edges, a strong midrib and many fine slanting side veins. Prepared leaves may become darker and softer.

In the kitchen

Washed and softened for wrapping glutinous rice, mung beans and pork before prolonged cooking. The leaf is a wrapper, not the filling.

Known locally as dongye and also written 柊叶. Leaf size and preparation vary; use leaves sold for food wrapping rather than unidentified garden plants. Do not assume bamboo, lotus or banana leaves are the same ingredient.
