At the table
Try it warm, breaking off a piece to taste the crust and center together. Ask whether it is plain, scallion-flavored, spicy or sweet-filled. If you avoid pork or other animal ingredients, ask about the dough fat, surface coating and filling, even when the bread looks plain.
Contains wheat and gluten. Some versions use pork lard, so this bread should not be assumed vegetarian; egg and honey also make some versions unsuitable for vegans. Sesame, peanuts or walnuts may appear in toppings or fillings. Some filled recipes use distilled cooking liquor. Confirm the actual recipe for allergies or dietary restrictions; plain appearance does not guarantee plain ingredients.
Plain, scallion and spicy versions are documented. Sesame, egg or honey may be added to the surface. A richer filled version uses lard, sugar, nuts and other sweet ingredients, sometimes with cooking spirits. These are variations, not ingredients guaranteed in every bread. Lumo is distinct from Jiyuan’s small soil-roasted tumo nuggets.

Recipes vary by restaurant.
How does it taste?
Toasted wheat is the main flavor in the plain version. Scallion, sesame, sweet toppings or chili change the flavor; richer filled versions can be sweet and nutty.
- Chili heat
- Texture
- A crisp browned surface gives way to a thick, soft and chewy interior in the plain village version. Pastry-style filled versions have more crumbly layers.
- How it’s made
- Wheat dough is shaped into thick rounds with a raised folded edge. The breads cook inside a covered cast-iron ao, with fuel heating the lid and the underside. Dough preparation varies: a documented filled version layers dough with lard-based shortening before enclosing a sweet filling.

Story & history
Heat above and below the bread
In Jiyuan’s Wangwu villages, lumo is made in a special covered iron pan. Fuel on the lid and beneath the pan heats the bread from both sides. Village households prepare it for their own tables and for sale, including around the Lunar New Year.
