How to enjoy it

Use a spoon and let each spoonful cool. Lift fish slices gently so they do not break apart, and check for small bones. The fish should be fully cooked in the porridge.

A useful check

Contains fish; an egg-white coating may be used. Fish sauce or soy sauce can add allergens, so ask about the seasoning. Small bones may remain even in fillets. Check carefully and cool the porridge before serving a child.

How it may vary

Fish makes this neither vegetarian nor vegan. Species, porridge thickness and garnishes vary. Egg white and cornstarch are optional coatings; fish sauce or light soy sauce may season the base. The representative bowl contains no chili; ginger and white pepper provide a different warmth.

A LITTLE SOMETHING TO READ

Story & history

The final simmer that keeps fish tender

Guangzhou’s shenggun congee starts with a smooth, already-cooked rice base. Fish slices are added near the end and cooked through, keeping them tender and distinct rather than simmering them until they disappear into the rice. Here, the word “raw” in yusheng refers to the fish before cooking, not a raw-fish topping served to eat.
