A fine white starch powder separated from the endosperm of corn kernels.

Type

A CLOSER LOOK

How to recognize it

Very fine white powder made from corn-kernel endosperm. It can be dispersed in cool water to form a slurry before cooking.

In the kitchen

Coats chicken in a Kung Pao marinade and thickens the sauce that coats the finished pieces.

Cornmeal is milled corn grain rather than separated starch. Dry cornstarch and its water slurry are two forms of the same ingredient. The generic word starch does not identify corn as its source; potato and tapioca starch remain separate ingredients.
