A CLOSER LOOK

How to recognize it

Thin sheets or curled strips from the tender layers near the bamboo-shoot tip. They differ from thick pieces of shoot flesh and from the coarse outer husk. Dried forms are softened for cooking.

In the kitchen

Chopped into some pork wonton fillings, or mixed with starch in regional bamboo-layer cakes.

Fresh and dried forms are used. Sunyi is distinct from ordinary fresh bamboo shoots, and not every Huzhou wonton includes it.
