A CLOSER LOOK

How to recognize it

Usually sold as dry, irregular gray-brown to black leathery pieces; Umbilicaria esculenta is a commonly used species. A food image is not a wild-species identification guide.

In the kitchen

Soaked and thoroughly cleaned before cooking; adds a slippery, gently chewy texture to soups and stews.

Products and species may vary. Use food-grade supplies; accompanying meat, broth and seasoning determine the finished dish’s dietary suitability.
