A CLOSER LOOK

How to recognize it

Unlike a jar of rendered lard, it can be kept as a solid roll or cut pieces with an ivory interior and darker outer surface.

In the kitchen

Small pieces release fat and a salty, smoky aroma when heated; they are used in some Xinglong pan-fried potato preparations.

It is animal fat. Seasoning and smoking vary; potatoes cooked with it are not vegetarian. It is a cooking ingredient, not a ready-to-eat snack.
