A CLOSER LOOK

How to recognize it

Firm small pale blocks before grilling; heat makes them swell and turn golden. Preparation cloth is removed.

Distinct from Shiping tofu set with local mineral water and from ready-fried tofu. Fermentation and grilling affect texture; sauces and brushing oil are separate ingredients.
