A CLOSER LOOK

How to recognize it

Elongated, uneven pods taper towards a pointed tip and often have wrinkled skin. Common red types ripen from green to red.

In the kitchen

Used to add intense heat to sauces and cooked dishes; some Xinjiang jiaoma chicken recipes include chopped ghost pepper in the broth.

Fresh, dried and powdered forms differ in texture. Heat varies between peppers and with the amount used; it is not interchangeable with a mild chili.
