Story & history

Yushan’s rolled flaky pastry, a taste of the old salt town

This account describes a tradition or story, rather than an established historical fact.

Yushan gan su bing is a hand-made layered pastry: its rich dough is rolled and folded, wrapped around a sweet filling, then baked crisp. Local tradition traces it to the Jiaqing reign (1796–1820), when specialists at Yan Fuchun Studio are said to have devised it. Yushan was known for salt production and drew merchants from different places; its foods reflect this meeting of tastes. Osmanthus, sesame and soybeans appear among its ingredients, and its craft is listed as municipal intangible cultural heritage in Chongqing.
