Boiled meat dumplings in a hot vinegar-and-chili soup

Xi’an sour-soup dumplings are large boiled dumplings, often filled with beef or lamb, served in a hot sour broth. In one preparation, vinegar is simmered with spices, while chili is flavored with beef or sheep fat; small dried shrimp and herbs can finish the bowl. The dumplings and broth are served together, rather than as plain boiled dumplings.
