One river fish, different tastes

Yellow catfish belongs to Chongqing’s river-fish cooking tradition, but not every version is fiery. In Hewan village beside the Youshui River, local cooks have made a gentler soup pot with pickled greens and tofu; visitors from central Chongqing have also cooked it with pickled chilies for a hotter, tingling taste. Paojiao names that chili seasoning, not a single recipe shared by every riverside community.
