A CLOSER LOOK

How to recognize it

Usually a fragrant tan-to-brown ground powder. Appearance alone cannot identify its formula; check the ingredient list or ask the cook.

In the kitchen

Adds layered spice aromas to braised and stir-cooked dishes, including thirteen-spice crayfish. It is a seasoning, not the main ingredient.

Spices, proportions and added salt or other seasonings vary. Do not assume it is interchangeable with five-spice powder or that every blend is allergen-free.
