A CLOSER LOOK

How to recognize it

Broad, fairly thick oval green leaves, often with a conspicuously winged stalk. They are leaves, not pomelo fruit or peel, and not Japanese yuzu leaves.

In the kitchen

Place beneath Gongcheng mugwort rice cakes during steaming for support and aroma; remove before eating the cake.

Cultivars vary in leaf shape. These leaves serve as a cooking liner here, not a salad green or an edible filling.
