A CLOSER LOOK

How to recognize it

Miichthys miiuy, a member of the croaker family Sciaenidae. It is a distinct species, not a general name for all yellow croakers.

In the kitchen

Its flesh is deboned and worked with starch for Wenzhou fish dumplings. Fish bones must be removed carefully; the finished dish is cooked before eating.

Fish used for local fish dumplings can vary. A recipe naming another fish should link to that species rather than assume it is mi-iuy croaker.
