A CLOSER LOOK

How to recognize it

Whole lentils are flattened and lens-shaped. They are distinct from chickpeas and the broad pods called biandou.

In the kitchen

Used in cooked dishes; a documented Lijiang jidou jelly preparation soaks, grinds and cooks lentils before cooling them into a block.

Seed colors and peeled or split forms vary. The image shows whole brown lentils, not lentil starch.
