A CLOSER LOOK

How to recognize it

Fresh grains of cultivated barley, Hordeum vulgare, at the green-to-early-yellow stage. Harvested grains may still carry husks, which are removed during food preparation.

In the kitchen

For Dingzhou nianzhuan, cook the young ears, rub and winnow away husks and awns, then mill the tender grains into short strands.

Different from dry hulled or pearled barley, barley flour and sprouted malt. Barley contains gluten; the fresh state does not make it gluten-free.
