A CLOSER LOOK

How to recognize it

Whole-spice combinations may include star anise, cassia bark and fennel seeds, among other spices. Ground blends look like a fine brown powder; appearance does not identify the exact ingredients.

In the kitchen

Whole-spice combinations flavor braising liquids. Ground blends are used in marinades and to season crisp or five-spice-flavored dishes.

The spices and their proportions vary. Wuxiang liao does not name a fixed formula or establish whether a particular recipe uses whole spices or powder. Five-spice powder (五香粉) specifically names the ground form.
