Paper-thin soft sweet glutinous rice slices

Funing cloud-slice cake

阜宁大糕

Fùníng dàgāo

A Funing (Yancheng) New Year and gift cake made mainly from glutinous rice flour, soft white sugar and lard, pressed into a brick and shaved into very large, soft, snow-white sheets that roll and unfurl without breaking. Often dotted with walnuts and sesame; sometimes called jade-belt cake or a northern Jiangsu style of cloud-slice cake.

The snow-soft thin sheets are easy to tear into small pieces and share, though the sticky rice texture calls for small portions; the traditional recipe contains lard.

Recipes vary. Ask the restaurant about ingredients and serving before you order.
