Chinese egg burger (danbao)

Chinese egg burger (danbao)

Chinese name
鸡蛋汉堡(蛋堡)
Mandarin pinyin
jī dàn hàn bǎo (dàn bǎo)

A compact, round griddle cake made in a molded pan, enclosing egg and often minced meat in a wheat-flour batter shell. Familiar at breakfast and street stalls, including Harbin’s morning markets, it is a hot savory snack rather than a bread-bun hamburger.

How to enjoy it

Eat freshly cooked, holding the paper sleeve or using a small fork. Let the hot center cool a little before biting. Specify the filling and chili preference when ordering, before sauce or spice powder is added.

A useful check

Contains egg and wheat. The meat-filled version is neither vegetarian nor vegan; an egg-only version still needs its sauces and cooking fat checked and is not vegan. Soy sauce may add soy and wheat; oyster sauce may add mollusks, and some recipes include celery. Fillings and sauces can introduce other allergens. Ask about the actual recipe and shared pan. Request the egg, meat and batter fully cooked; omitting visible chili does not guarantee a mild sauce.

How it may vary

Pork is a common meat filling, but the meat type is not fixed by the name. Scallion, celery, mushrooms, ham sausage or other additions may be used. Egg-only versions also exist. Batter seasoning, raising agents and finishing sauces vary. This molded cake differs from a hamburger in a baked bread bun.

Texture
A golden, lightly crisp outside with soft cooked batter, set egg and a moist meat layer inside. Thickness and the balance of egg, meat and batter vary.
How it’s made
A flour-and-water batter is poured into oiled round molds. Egg and seasoned minced meat are cooked in other wells, then joined to the batter while it can still bind around the filling. More batter closes the other side; the cake is turned and cooked through until golden. Some recipes add baking powder. Sauces or spice powders may be added at the end.

Story & history

A round breakfast cake from the griddle

Danbao is part of the breakfast-stall scene in Harbin’s Hongzhuan Street morning market, alongside other hot snacks. The appeal is watching separate rounds of batter and egg become a filled cake in the pan. Egg burgers are also made elsewhere in China; the Harbin association does not mean the snack originated there.
