How to recognize it

A large, thick-rinded sour citrus used in Taiwanese Hakka suangancha. Research identifies it as Citrus aurantium cv. Hutou Gan; the yellow-orange rind is coarse and wrinkled, with thick white pith.

In the kitchen

Use the rind as a casing and mix the seedless pulp with tea before repeated steaming, pressing and drying.

Keep the local cultivar identity: it is not ordinary sweet orange, kumquat or pomelo. Other citrus versions of the tea should be identified separately.
