泰兴大麦粯子粥

Tàixīng dàmài xiànzi zhōu

A Taixing summer porridge of boiling rice into which milled barley or yuanmai flour (粯子) is whisked, often with a pinch of culinary alkali, until the bowl turns pale brown and lightly viscous. Locals nickname it 'local coffee' for the color. Related barley porridges appear along the Jiangsu–Shanghai riverine belt.
