Taiwanese sausage in a rice sausage

大腸包小腸Dàcháng bāo xiǎocháng

Grilled pork sausage tucked into a sticky-rice sausage

A grilled glutinous-rice sausage is split lengthwise and filled with a smaller Taiwanese pork sausage. Garlic, pickled greens and thick soy sauce can be added. The “large” and “small intestines” in the name refer to this two-sausage assembly; the outer part is filled with rice.

How to enjoy it

Hold the food with its paper wrapper or tray, keeping the paper out of your mouth. Take small bites through both sausages; for sharing, ask whether it can be cut into pieces.

A useful check

Contains pork. Rice sausage may use pork casing, lard or dried shrimp; sauces and toppings may add soy, wheat or peanuts. Check the actual ingredients for dietary needs.

How it may vary

The plain version is not chili-hot; added chili sauce changes that. Removing the inner sausage does not necessarily make the rice part vegetarian.
