At the table
Lift a small fold of the soft rice sheets with chopsticks and mix gently with the sauce. Let steamed portions cool a little.
Sauces may contain soy, wheat or sesame, and some versions add crab or pork. Ask about the sauce and toppings if you have allergies or dietary restrictions.
One traditional steamed serving is dressed with sesame oil, soy sauce, pickled ginger and toasted sesame. Other preparations include versions with curry and crab. Ask which sauce and toppings are used.
The rice sheets are thin, soft and slippery, so a small portion is easy to share; toppings and temperature should be checked.
Recipes vary. Ask the restaurant about ingredients and serving before you order.

A LITTLE SOMETHING TO READ
Story & history
A family-shop story behind the name Chencun fen
This account describes a tradition or story, rather than an established historical fact.
One local account traces Chencun fen’s early form to cook Huang Dan’s family shop in Shunde’s Chencun, dated to 1927 in the brand record. Neighbors called the sheets “Danji fen,” after their maker. In 1995, the account says, Huang’s son Huang Zhijun answered “Chencun fen” when asked their name at a Foshan restaurant; the place-name caught on.
