At the table
Pick up a small pork piece with chopsticks and try it with a little sauce.
The freshly fried pork and sauce can be hot. Soy, sesame and rice wine are used in this version.
Red yeast rice powder can color the coating.
The sweet-sour sauce and crisp pork pieces are easy to portion; cut into small pieces and let them cool before sharing.

Story & history
A Fuzhou home dish with a lychee legend
Fuzhou’s lychee pork is a Min dish named for curled pork pieces shaped to recall the fruit; it contains no lychee. A local tale says a cook created the look for a homesick Tang court consort longing for the lychees of her Putian home, but this remains folklore, not established history. In Fuzhou, the dish is also remembered as a familiar home-table favorite and, for many, a taste of a mother’s cooking.
