Fuzhou’s jar dish and the monk story

Fotiaoqiang is one of Fuzhou’s grand banquet dishes, closely associated with Juchunyuan. Generations of its cooks have refined the slow-cooked jar dish, whose earlier name, Fushouquan, evokes good fortune and long life. The story of a monk leaping a wall for its aroma is a legend, not a proven origin. Juchunyuan’s preparation technique is recognized as national intangible cultural heritage.
