How to recognize it

Sold as a liquid or as salts prepared for tofu making. Appearance alone cannot identify its composition; check the food-grade product label.

In the kitchen

Added during tofu making to form curds that can be pressed into tofu or dried tofu. Follow the specific product’s directions rather than using it as table seasoning.

Composition and concentration vary. This entry does not mean ordinary salt water, gypsum, glucono-delta-lactone or spiced braising stock.
