A CLOSER LOOK

How to recognize it

It may be strained and golden, retain cooked scallions, or be green in blended versions. Colour alone does not identify the base fat.

In the kitchen

Used in noodle dressings and some savory fillings, including the leaf-fat version of Weinan shichen baozi. Ask “葱油是用什么油做的?” (“What oil or fat is used to make the scallion oil?”).

The base fat, added seasonings and amount of scallion vary. Do not assume every version is vegan or allergen-free; check the complete dish.
