A CLOSER LOOK

How to recognize it

Thin dried strands, heat-treated after the initial noodle-making process to give a darker colour and better resistance to simmering.

In the kitchen

Simmered in thick oyster noodle soup; they are wheat noodles, not rice vermicelli.

Wheat flour, water and salt form the base; some products also contain starch. Contains wheat. Check the product label for other ingredients.
