Shengzhou stir-fried zha noodles

Stir-fried extruded indica-rice noodles with pork, vegetables and egg shreds

Chinese name
嵊州炒榨面
Mandarin pinyin
Shèngzhōu chǎo zhà miàn

A Shengzhou (Shaoxing) stir-fry of zha mian—dried indica-rice noodles extruded and pressed in a traditional process—soaked soft, drained, then wok-tossed with pork, bamboo shoot, carrot and dried tofu shreds, and finished with egg shreds and scallions. The rice strands are springy and absorb sauce without turning mushy. It is one of Shengzhou's snack three treasures alongside xiaolongbao and fried rice cakes. Egg-soup zha mian is a related but distinct style.

How to enjoy it

Lift a small bundle and eat with the accompanying pork, egg and vegetables. Let it cool; cut long strands into shorter lengths when needed.

A useful check

This version contains pork, egg and soy ingredients. Soy sauce may contain wheat, so rice noodles do not make the whole dish wheat-free.

How it may vary

Bamboo shoots, carrot and dried tofu depend on the chosen mix. Seasonings and cooking fat also vary; confirm meat and egg if requesting a meat-free version.

A mild version with tender noodles and finely cut toppings may suit children who can chew them. Cut long noodles short, check that pork and vegetables are tender, and let the portion cool.

Recipes vary. Ask the restaurant about ingredients and serving before you order.

Story & history

Rice noodles shaped by pressing

This account describes a tradition or story, rather than an established historical fact.

The zha in zha mian refers to pressing rice dough into strands. These noodles are closely associated with Shengzhou, where different preparations mark everyday meals and hospitality. This version goes through the wok with meat and vegetables, then receives egg shreds and scallions. The egg-broth version served to guests is a separate preparation, not the same stir-fried dish.
