Jinyun baked flatbread

缙云烧饼Jìnyún shāobǐng

Clay-oven sesame flatbread stuffed with pork and mustard greens

A Jinyun, Lishui flatbread baked against the clay liner of a wooden barrel oven. The dough is leavened with a fermented-dough starter, and the local method uses boiling water so the bread adheres to the clay wall. Its filling combines pork with local dried jiutou mustard greens. Charcoal baking gives a crisp exterior and soft interior, with wheat, meat, scallion, sesame and dried-greens aromas. The craft entered the national intangible-heritage list as an expansion project in 2021.

How to enjoy it

Break or cut off a small piece and eat the sesame crust with the filling. Let the hot pork filling cool before biting.

A useful check

Contains wheat, sesame and pork. Recipes and seasonings vary, so check other ingredients when needed. The freshly baked filling can be very hot.

For a child who can chew the crisp crust and meat filling, an adult can cut a small portion and let it cool thoroughly. Check wheat, sesame and other ingredients; a shareable snack is not automatically suitable for every child.

Recipes vary. Ask the restaurant about ingredients and serving before you order.

Story & history

A snack beside the opera stage

This account describes a tradition or story, rather than an established historical fact.

Jinyun shaobing has a place in the local custom of selling food around rural Wu opera performances. People buy the breads to eat themselves or offer to guests. The portable barrel oven and fragrant pork-and-preserved-greens filling help explain its role as a hot snack shared during community gatherings.
