A CLOSER LOOK

How to recognize it

Peeled kernels are ivory, broad and flattened, with a pointed end. Appearance alone cannot establish variety or safe processing.

In the kitchen

Used in prepared kernel milk and desserts such as xingren doufu. Do not eat raw, unprocessed kernels or their powder.

This entry covers sweet apricot kernels, not bitter apricot kernels or almonds. Use products intended for cooking and follow their preparation instructions; peeling alone is not a safety guarantee.
