A CLOSER LOOK

How to recognize it

Thin, smooth sheets or wide ribbons that soften when soaked or cooked. Hydrated pieces are often pale and partly translucent; width, thickness and clarity vary.

In the kitchen

Simmered with meatballs, tofu and vegetables in some pin sanxian preparations. Ask “粉皮是什么淀粉做的?” (“What starch are the sheets made from?”).

Starch source, additives and thickness vary. Ask the maker rather than assuming a particular crop or wheat-free status from appearance. Fresh, dried and rehydrated forms handle differently.
