Tofu, wheat noodles or glass noodles?
- For tender tofu: mapo tofu (麻婆豆腐), with chili-bean sauce and Sichuan pepper. Check the minced meat.
- For wheat noodles: dan dan noodles (担担面). Check the pork topping, chili seasoning and sesame.
- For glass noodles: ants climbing a tree (蚂蚁上树), with minced pork rather than insects.
Three names, three different plates
Mapo tofu centres on tender tofu in a chili-bean sauce with Sichuan pepper. It can contain minced meat. Dan dan noodles are wheat noodles with a savory topping and chili seasoning; toppings and seasonings vary, so ask about meat and any sesame-based sauce.
Ants climbing a tree uses glass noodles and minced pork with fermented chili-bean paste. The grains of meat among the noodles explain the visual joke in the name. It is not an insect dish, and it is not vegetarian simply because the noodles occupy most of the plate.
Ask about the sauce before ordering less chili
A kitchen can sometimes reduce a finishing spoonful of chili oil. That does not mean it can remove chili already present in a paste or prepared sauce. Ask what can actually be changed before choosing a dish.
Málà combines má, the numbing or tingling quality associated with Sichuan pepper, and là, chili heat. If one sensation bothers you more than the other, name it separately. A generic ‘mild’ request may not communicate the distinction.
Give a shared meal some breathing room
You do not have to order several chili-rich dishes together to experience regional food. Choose one you are curious about and ask for suitable contrasting dishes from the actual menu. A small first order gives you more information than a long list chosen in advance.
If your route includes both Sichuan and Chongqing, make a shortlist for each stop. Their food traditions overlap, but exploring each place separately can help you notice local differences instead of expecting every bowl and sauce to be the same.
Before you order
- Ask separately about chili and Sichuan pepper.
- Check meat in tofu and noodle dishes.
- Ask whether chili is already in the sauce.
- Choose a contrast rather than making every dish spicy.
