Story & history

A roadside fish with a recorded cooking lineage

Taian’s fish-cooking tradition is locally traced to Zheng Haiqing, who began practising the technique in 1930; it has been passed down through five generations in his line. The town lies beside route S205, where passing traders and diners helped its fish become known beyond the town. The traditional technique is listed as Chongqing municipal intangible cultural heritage, and Taian fish is a leading dish in the Yuwei 360 Bowl food program. Its story brings together a family craft and the life of a roadside town.
