A LITTLE SOMETHING TO READ

Story & history

A roadside request brought tofu into Sanxikou fish

Sanxikou tofu fish grew out of roadside dining along old Route 212. Local tradition links the addition of tofu to drivers who asked for tofu to be cooked in the spicy fish seasoning left in their pots; restaurant owners later began cooking the fish and tofu together. By the 1990s, more than 30 tofu-fish restaurants lined a short two-kilometre stretch. When through traffic shifted to the Yu-Wu expressway, the old road and its eateries declined. Beibei’s later renewal drive upgraded shops along the corridor and developed a local food plaza, tying the dish’s fortunes to the highway route.
