Fuling hot-oil douhua and its aromatic finishing pour
Fuling hot-oil douhua turns soft-set soy curd into a street-side specialty with one vivid finishing move: soybeans are ground and set, then hot oil is poured over the prepared seasonings. That hot pour gives the dish its name and aroma; the tofu itself is not fried crisp. Tian Gui’s hot-oil douhua shop dates to 1985, and Fuling listed the technique as district-level intangible cultural heritage in 2023. The technique puts the moment of hot oil meeting soft curd at the center of the bowl.
