At the table
Ladle some broth into a small bowl and let it cool, then eat the tender meat and vegetables. Use chopsticks to separate meat from bones; the broth is part of the dish, not just cooking liquid.
The pot and broth can be very hot, and chicken pieces may contain small bones. Cured pork and preserved vegetables can be salty. Fermented-rice liquid may be used; cooking does not establish that a dish is alcohol-free.
Contains chicken and, in the traditional version described here, pork. Preserved-vegetable identity and seasoning vary; confirm the actual recipe for dietary restrictions or allergies.
An adult can offer small cooled portions of soft meat after carefully removing bones. Consider the salty cured ingredients and any added seasoning; softness alone does not make the whole dish suitable for every child.
Recipes vary. Ask the restaurant about ingredients and serving before you order.

How does it taste?
Savory chicken broth with smoky, salty pork and the concentrated taste of preserved vegetables. The traditional broth is not chili-led; seasonings and saltiness vary.
- Chili heat
- Texture
- Tender chicken and cured pork retain their shape in a clear broth; preserved root slices soften with long steaming. Bones remain in many chicken pieces.
- How it’s made
- Put the ingredients in the guzi and set it in a water-filled iron pot. Steam travels through wall channels into the food chamber. Cool water in the pan-shaped lid helps condense steam into broth during several hours of cooking.

A LITTLE SOMETHING TO READ
Story & history
Zhuyuan guzi chicken, a clay pot that turns steam into broth
The drum-shaped clay guzi gives this Fengjie dish its name. Village kilns around Zhuyuan make the distinctive vessel, whose wall channels and cool-water lid turn steam into broth. Slow steaming brings together the flavors of fresh meat and preserved ingredients. The traditional craft entered Chongqing’s municipal intangible-cultural-heritage list in 2011.
