A CLOSER LOOK

How to recognize it

A preserved root vegetable, usually tan to brown after curing. Cut pieces may be wrinkled and firm; they soften during cooking.

In the kitchen

Sliced into some Fengjie Guzi chicken preparations to season the broth. Its saltiness contributes to the whole dish.

Curing time, salt and seasonings vary. The local name datoucai can refer to different vegetables: confirm turnip rather than assuming mustard root, mustard stem or daikon. Check added seasonings for dietary needs.
