Changsha stinky tofu

长沙臭豆腐Chángshā chòu dòufu

Black fried tofu with a pungent aroma

Black squares of tofu with a crisp skin and soft, pale center. Their strong aroma develops during soaking in a fermented liquid, before frying. A chili-and-garlic dipping sauce brings extra heat; it may be served separately or added to the tofu.

How to enjoy it

Pick up a piece with chopsticks or the supplied pick. Open it carefully and let the hot center cool before biting. If sauce is separate, try a little first and add more to taste.

A useful check

Contains soy. The center can be hot, and chili sauce can be spicy. Confirm the brine, oil and sauces for dietary restrictions; tofu alone does not establish a vegetarian dish.

How it may vary

Brine ingredients flavor the tofu and need not be visible on the plate. Sauce and frying-oil choices differ; the plain tofu’s chili heat does not describe the added sauce.

Story & history

Changsha stinky tofu shaped by the Huogongdian temple fair

This account describes a tradition or story, rather than an established historical fact.

At Changsha’s Huogongdian, snack stalls gathered around a fire-god temple and its fairs. The Huogongdian stinky-tofu craft entered China’s national intangible cultural heritage list in 2021. Its soaking, frying and sauce-making traditions help distinguish this local snack from other regional tofu dishes.
