A CLOSER LOOK

How to recognize it

A thick beige to light-yellow paste, usually smooth or finely textured.

In the kitchen

Used to season sauces, including some Taiwanese oyster-omelet sauces.

Contains soy. Formulas vary: some add alcohol or fish-based dashi. Check the label; pale color alone does not establish a vegetarian or alcohol-free product.
