A CLOSER LOOK

How to recognize it

Usually smooth and thickened, combining chili with sweetness; not the same as plain chili paste.

In the kitchen

For dipping or pouring over foods such as a-gei, rice dumplings or radish cake.

Formulas vary: rice flour or other thickeners, tomato and soy-based seasonings may be used. Some contain soy or wheat. Sweetness does not mean chili-free; check the actual sauce.
