A CLOSER LOOK

How to recognize it

Scomberomorus commerson, a mackerel-family fish called 土魠 in Taiwan; the species name distinguishes it from other Spanish mackerels.

In the kitchen

Cut into pieces, coated in sweet-potato starch and fried for tuotuoyu thick soup; also suitable for other cooked fish preparations.

Market names can overlap with other Scomberomorus species. Confirm the species when it matters; flesh or fried pieces alone may be hard to identify. Contains fish and may retain bones.
