A CLOSER LOOK

How to recognize it

Fresh mushrooms have tan to brown fibrous scales on the cap, a stout pale stem and thick white flesh. These appearance notes describe a kitchen ingredient, not a way to identify wild mushrooms for eating.

In the kitchen

Sliced and cooked in stir-fries, including the Jilin dish with Chinese yam. Their pronounced aroma is suited to restrained seasoning.

Maturity and preparation change the shape and texture. Jisongrong, also called Brazilian mushroom, is a different mushroom; similar trade names do not establish the same species. Use correctly identified food supplied for cooking.
