A CLOSER LOOK

How to recognize it

Very fine, moist grains collected from beneath the shrimp’s abdomen; color varies with maturity and preparation. Distinct from the richer tissue taken from the head.

In the kitchen

Cooked as part of Suzhou three-shrimp noodle toppings, alongside shrimp meat and xianao, the rich head tissue.

Fresh roe is different from a packaged dried shrimp-roe seasoning. Recipes may rinse, strain and cook off moisture before use. Contains shrimp; not presented as ready to eat.
