A CLOSER LOOK

How to recognize it

Firm, dry pieces or strips, usually yellow-brown to brown, which soften and expand when rehydrated. They retain a fibrous structure.

In the kitchen

Cooked with salt-cured pork, simmered in soups or used in braised dishes after rehydration.

Species, shape and salting vary; flattened bianjian is one form. Dried shoots are not the same prepared ingredient as fresh spring or winter shoots, or fermented sour shoots.
