A CLOSER LOOK

How to recognize it

Soft rounded pearls, dark brown with slightly translucent edges after cooking; not raw starch powder or popping juice balls.

In the kitchen

Cook the starch pearls and combine with sugar syrup before adding to milk tea. Chew the pearls when drinking.

Size, colour and formulations vary. This version uses tapioca starch, brown sugar and water; check other products rather than assuming identical ingredients.
