A CLOSER LOOK

How to recognize it

Shelled kernels are ivory-colored, elongated and irregularly creased. They are different from the fruit flesh called 榄角 and from Mediterranean olives.

In the kitchen

Chopped or toasted kernels add a nutty flavor and texture to pastry fillings; this includes some almond-biscuit recipes.

Recipes may use whole, broken or ground kernels. A pastry containing these plant-derived kernels may still contain lard, egg or other animal ingredients.
