Traditional Xinglong coffee

兴隆传统焙炒咖啡Xīnglóng chuántǒng bèichǎo kāfēi

A dark, full-bodied coffee from Hainan's Xinglong tradition. In this representative version, robusta beans are roasted with sugar, butter and a little salt, giving caramel and dairy notes even when the cup looks black.

Specification
Roast the coffee, stir-fry it with sugar, butter and salt, cool and grind. Brew with hot water and filter out the grounds. Plain-roasted beans and modern blends also exist. Confirm the roasting recipe; ordering black or no added sugar does not remove butter or sugar already in the grounds.

How to enjoy it

Let it cool, then sip. Taste before adding anything: sweetness and butter may already come from the roasted grounds.

A useful check

Contains caffeine and milk from butter. This recipe is vegetarian but not vegan. Check the roast ingredients if avoiding dairy; the cup may be very hot.

How it may vary
