A CLOSER LOOK

How to recognize it

Whole nutmeg kernels are brown and oval with a wrinkled surface; the cut interior is marbled.

In the kitchen

Used in spice mixtures, including some recipes for Daokou braised chicken.

Nutmeg is the seed kernel; mace is the separate covering around the seed. It is not white cardamom or tsaoko.
